Who You're Hiring
The Team Behind the Barrels
Clyde Hollidayowns CL’s Smokin Barrels BBQ, and he still runs the pit himself. He builds every menu, tends the smoke overnight, and he is on site the day of your event — not sending someone in his place. When you ask a question about your food, the answer comes from the person cooking it.
Around him is a crew that handles everything the pit doesn’t: load-in and setup, the serving line, drinks and refills, breakdown and clean-up. That is what lets us hold a schedule on a Saturday with more than one event on it, and it is why a wedding gets the same crew discipline as a church cookout.
We’re a small outfit on purpose. Big enough to staff your event properly, small enough that the owner’s name is on the work and he knows exactly what went out the door.
